Crock Pot Chili

  • 1 - 19 oz can kidney beans - drained

  • 1 - 15 oz can tomato sauce

  • 2 - 14 1/2 cans chopped tomatoes

  • 2 medium green peppers - chopped

  • 1 large onion - chopped

  • 1/2 tsp minced garlic

  • 2 1/2 lbs ground beef

  • 1/2 tsp celery seed

  • 1 1/2 tbs chili powder

  • 1/2 tbs crushed chili

  • 1 tsp cumin

  • 1/8 tsp Italian seasoning

  • 4 or 5 "shakes" Tabasco

  • 1 small bay leaf

  • 1 tsp salt

  • 1 tsp pepper

Sauté onion, garlic & peppers in small skillet. Brown beef in large skillet. Drain fat. Add all ingredients to crock pot. Cook on high 4-6 hours or medium 6-8 hours.

Beef Stew

  • 1 tbs flour

  • 1/2 tsp salt

  • dash pepper

  • 1-2 lbs stew beef

  • 1 can tomato soup

  • 1 can (1 1/4 cup) water

  • 1 packet onion soup mix

  • 1/4 tsp Italian seasoning

  • 4 medium potatoes - pared and cubed

  • 3 medium  carrots - cut in 1" pieces

  • 1/4 cup dry red wine

Meat can be browned or added raw. Mix soup, water, seasoning, salt pepper, onion soup mix, wine and flour. Add meat, potatoes & carrots. Bake at 375 degrees for 2 1/2 - 3 hours or put in crock pot on high for about 6 - 8 hours. Makes 4 - 5 servings.
